Frittata is a fancy Italian word for an omelet with potatoes.
You just need eggs, milk and a fry pan to bring this dish together and you will be eating in around 10 minutes and back in the water in no time.
You are only limited by your imagination with what you put in and any of the ingredients can be interchanged with whatever leftovers you have in the fridge.
This is a pretty good recipe:
Fry 1onion (diced), two potatoes (sliced about 1cm thick}, 1 chopped sausage (grilled first), 1 red capsicum (chopped), mushrooms (sliced) and garlic (crushed) in a fry pan until brown.
Crack eight eggs into a bowl and mix in half a cup of milk and beat together.
Spread your ingredients evenly in the frying pan and pour in the milk and egg mix.
Stir through handful of spinach leaves and sprinkle some chunks of tasty cheese or parmesan on top.
Remove fry pan from stove when frittata is almost cooked then place under the grill to toast the top. Note: don’t place the fry pan all the way in. The handle may be hot.
Cut into squares and serve with salad or crusty bread and you’re done and ready to go back into the water.
It also tastes good the next day. |
